Awesome Cheesecake Recipe
Note, you must follow all directions or it won’t turn out right. (seriously, it won’t!) Okay, first all your ingredients need to be at or close to room temperature. So, set the ingredients out 30 minutes before making.








CRUST:
1 1/3 C. Graham Cracker Crumbs
6 Tablespoons melted butter
1/8 C. Flour
1/3 C. Sugar
In the bottom of a springform pan, mix all dry ingredients, then mix in butter. Press into bottom of pan.
FILLING:
Three 8 oz. packages Cream Cheese (don’t get low fat)
4 eggs
1 Cup + 2 Tablespoons granulated sugar
1 1/2 teaspoon vanilla
Mix cheese with sugar on medium speed. Add eggs ONE at a time (mix in well before adding next egg). Last, add vanilla. Mix 5 minutes at medium speed. Pour over crust. Bake 325 degrees for 50-55 minutes. (can leave in a minute or so more if middle is wobbly)
TOPPING:
16 oz. (1 pint) Sour cream (don’t get low fat)
1 1/2 teaspoon vanilla
1/2 Cup + 1 Tablespoon granulated sugar
Mix on medium speed for 5 minutes. Take cheesecake out of oven. Turn oven UP to 375 degrees. Spread topping over cheesecake. Return to oven 10 minutes. Let cool at least 1 1/2 hours before refrigerating. Can make 1-2 days before you need to serve it if stored in fridge covered.
