Hope you all have a wonderful day! Shane and I are going to court to evict our tenant. Wish us luck! Then it’s back home to start the slow cook of the traditional St. Patrick’s Day (American style) meal of Corned Beef and Cabbage.
Best way to make this? In a large pot, put cool water 3/4 filled. Throw in your baby carrots. Add your brisket, fattier side up! Bring to a boil, then simmer for 4 hours, covered. In the 3rd hour, add your quartered, peeled potatoes, and lastly in the last 30 minutes, add your quartered cabbage.
After the 4 hours (this is four hours from the start of the SIMMER), take out, put in a pan, take a 1/4 cup or so of brown sugar…put the sugar on top of the fatty side, and put in a 350 oven for 15-20 minutes.
Cut against the grain when ready to serve~!

I loved how the first sentence segued right into the next.
We’re evicting in Nova Scotia. The upstairs and downstairs tenants are warring, cops have been there numerous times. Too many details to mention here but “Just Wacky” defines it best.
